E Z E K I E L T O A S T & E G G M U F F I N
Egg muffin:
8 eggs (for 12 muffins)
Sautéed mini sweet peppers & red onion
Any meat you like ... (chicken, sausage, bacon, ham..)
Cheese (optional)
Avocado toast:
1 slice Ezekiel bread toasted
1/4 of an avocado with lime and pepper
Spray the muffin tins with non stick spray, beat 8 eggs and season with salt and pepper . You can use more if you would like, but I am not a huge fan of eggs! Sauté the veggies all together.. again, any veggies you like. Cook the meats. For this time around, I used sausage and bacon. (Bacon won’t kill you!) Add the veggies in the muffin cups as well as the meat. You have so many options with this! Add as much egg as you like. (They puff up in the oven). I topped with a little cheddar cheese here. Bake at 400 degree for 20 minutes.
